Rohini Dey: Inspiring Desi of the Day

As founder, owner and culinary director of Vermilion, Rohini oversees the operations and culinary evolution of her restaurants and leads both her kitchen teams. She also writes a series on restaurants “From the Gut” for Chicago Sun Times and Huffington Post.

Since inception, Vermilion has been acclaimed as “Best New Restaurant” by Chicago Magazine, Travel & Leisure, Town & Country, USA Today, Bon Appetit, Wine Enthusiast, 3 stars Tribune among others. For it’s pioneering cuisine, woman-led team and Rohini’s entrepreneurial journey she and Vermilion have been profiled in The Financial Times, Time, Oprah Magazine, Fortune, FSB, Business Week, Esquire, Crain’s, Sante, Shelter, Chicago Tribune, Wall Street Journal, New York Times, BBC World, CBS News, NBC, Business Today among others. Rohini was awarded the “Woman of Distinction” award by Children’s Hope, Woman of Distinction by Varli Culinary awards, and “Entrepreneur of the year – India” by the City of Chicago. Rohini was selected by the Economic Times as one of the thirteen “Overseas Indians who set to shine even more in 2013.” She is on the National Advisory Board of the James Beard Foundation and a member of the American Chef Corps of the US State Department Diplomacy Culinary initiative.

Roshni is a highly innovated and passionate chef with over 15 years of industry experience. She has a unique fusion style of cooking, blending different cultures together. She has cooked in 5 star hotels, Country Clubs, restaurants, colleges and private homes is Asia, UK, Canada and the US. In 2009 Roshni was awarded Chopped Champion on the hit Food Network show Chopped. In 2011 Roshni was also invited to be the featured chef for Masala, Mendhi, Masti in Toronto Canada, North America’s largest South Asian festival. In 2012 Roshni was a contestant on the very popular FOX TV show Hell’s Kitchen with Michelin Star chef Gordon Ramsey

Ritu Dalmia: Inspiring Desi of the Day

Ritu Dalmia is an Indian celebrity chef and restaurateur. She is the chef and co-owner of the popular Italian restaurant Diva in Delhi, which she established in 2000, with co-founder Gita Bhalla under partnership firm “Riga Food”. Other restaurants of company include ‘Latitude 28’ and ‘Cafe Diva’. She hosted a TV cookery show, ‘Italian Khana’, for NDTV Good Times for three seasons, and published her first cookbook by the same name in 2009

Chef Manjunath Mural: Inspiring Desi of the Day

Chef Manjunath Mural is the first Indian Executive chef to score a Michelin star for an Indian restaurant in Southeast Asia.
As Executive Chef of Song of India, a modern Indian restaurant that features regional  flavours across India, he was recognised for his decades of hard work in 2016 when the restaurant was awarded one Michelin star in Singapore. In 2017, he once again led his team at The Song of India to garner a Michelin star – still the only Indian restaurant in Southeast Asia to have the honour.
